<Aged sake, mild, with a splash at the end.
Manufactured in December 2021.
The temperature should be room temperature.
The aroma is of course matured. Lactic acidity and caramelized bitter honey.
The mouthfeel is mildly acidic and bitter. It has not aged too long. It's a relief. But it is not as sweet as I expected, and it is milder than I expected. Even if you leave it in your mouth for a while, the bitterness only gets slightly bigger and remains mild.
But the moment it comes into contact with air in the mouth, the matured acid bitterness is suddenly and unexpectedly released! There is also a little sweetness from the honey. The sweetness of the honey is also present, but it is hidden behind the acid bitterness.
The aroma is full of acidity. At the end, it seems to cut off at once like an arugula, but a little bit of umami remains in the air.
It has a sense of maturity, but seems to go surprisingly well with meals.
If I were to use a Ghibli analogy, it would be Makurokurosuke from "My Neighbor Totoro". When you expect it to be quiet, it suddenly comes out in a flash, followed by a little fluffiness.
