I don't know who is making it now that the toji has moved to Inada Shuzo in the same city.
It is a junmai ginjo, but the rice polishing ratio is 40%, which is a mysterious spec. It is quite acidic. It's not spicy, but it has a little bit of a strong character. It is like a wine yeast sake.
