This is the second craft saké from Heiroku Brewing. It is said to be a sake that does not polish the rice too much.
When I drank it, I felt the acidity first and then the umami came through. On the first day, I thought the sweetness was weak, but on the second day, the sweetness was better. It has a soft sake quality. A complex miscellaneous taste lingers in the aftertaste.
Pairing with Ate
It really goes with everything. Excellent.
