Spring Shine was my favorite spring sake last year.
I drank it again this year.
100% Yamada-Nishiki from Yoshikawa, District A
Rice polishing ratio 55
Alcohol 14%.
Nice aroma and pitchy!
The gravity system is used, which makes it more gaseous.
Soft sweetness from the four-stage brewing process, muscat-like flavor, acidity, and a slight bitterness, with a clean finish.
The rice is polished to be clearer and lighter than last year's.
I don't remember what it tasted like last year, so I couldn't tell 💦.
By the second day, it tasted like muscat? Melon? Refreshingly fruity & sweeter, very tasty ❣️
Seems sweeter than last year.
The 3rd day is already melon🍈! Even sweeter!
Delicious sweetness with a clean aftertaste
On the 4th day, it is sweet and delicious! The fruity taste has decreased, but it is very sweet and the flavor has increased↑.
Last year, the sweetness was not so strong, but this year, it became sweeter and sweeter!
I liked the 2nd day, when it had a nice sweetness with a nice freshness. ❣️
The third picture is a barrel of sake dedicated to Tenjin-san the other day.
I enjoyed looking at the sake barrels not only from Kyoto, but also from Nada and Shiga.
