Subdued apple-like finish
The same aroma as the first rise is accompanied by the aroma of alcohol, and the sweet umami of rice spreads with a slight acidity, followed by a slight spiciness and slight bitterness from the alcohol.
This sake has a somewhat classical impression and is more of a food sake than a stand-alone sake.
We happened to be passing by the brewery when they were holding a "kura-opening" event and stopped by. There was a lot of festivities going on in the premises, including a neighborhood association, and there were parties everywhere. There were sake and shochu tastings, and steamed sweet potatoes for shochu.
