Because it is written "Soyasui", I think it is probably made from "Bodai-gan" or "Sui-gan". It tastes like a lactic acid bacteria drink like Calpis or Yakult.
It is a very challenging sake for a major maker. This kind of sake doesn't have as much sweetness as the sake level. It was minus the sake content, but the aftertaste was quite pungent.
It's a little bit like Takanaga's Bodhidoki.
