I thought "takachiyo" was more on the fruity side, even with the kanji.
However, there is no sweetness at all ❗️
First, the umami that comes in quickly, followed by the acidity to control it, and then the growth can simply be called sake 😌.
It was a dry, crisp, and clear sake 🍶.
It matched best with food with salt 🤗.
