This is a "super", super Kudokutei, a Junmai Daiginjo-shu brewed with a luxuriously polished rice of Modified Shinkou🌾 up to 30% polishing ratio and released in a fresh, once-heated condition.
Kairi Shinko is a rice variety bred in Akita Prefecture in 1959 as a secondary selection from Takananishiki.
The appearance is nearly transparent, with a slight yellow tinge.
The aroma is gorgeous with a hint of freshness.
Gorgeous acacia aroma overflowing from the glass.
Aromas of apple, white peach, and melon.
Gentle and refreshing selfeil.
Beautiful rice aroma of about Kamishin powder.
Slightly tart texture.
First touch of rich sweetness with juiciness.
Mixed with acidity accompanied by freshness, it spreads quickly and becomes more juicy.
From the mid-palate, while the wine is nicely and smoothly receding with a moderate rice flavor, there are subtle nuances of complexity such as very slight bitterness and astringency.
The long, stringy, beautiful lingering finish is tightened by bitterness and astringency.
