This is Wakamusume Ruri Karakusa Unfiltered Nama Sake.
Ruri Karakusa is what we call nemophila. The label design is beautifully inspired by the image of nemophila, which reminds us of a blue carpet spreading all over the area.
Shintani Brewery in Yamaguchi Prefecture is a small sake brewery run by a married couple.
Fumiko Shintani, a former nurse, took over as toji (chief brewer) and brewing manager from her husband Yoshinao in 2018, and is struggling daily to make sake.
In 2019, the brewery's facilities were completely renovated and the quality of the sake has improved remarkably, making it one of the breweries that I personally pay attention to.
The appearance is clear crystal and the aroma is mild.
On the palate, the smooth mouthfeel is followed by a dense sweetness reminiscent of ripe peaches and apricots, and then a more refreshing fruity acidity comes forward, followed by umami and bitterness that spread to the back of the palate and finish with a sharp finish.
After the finish, there is a slight alcohol taste.
The acidity has juicy, citrusy, refreshing nuances, and the after-flavor is bittersweet, which is also delicious. ☺️
It may not matter if it's a male or female, but sakes brewed by female toji are more likely to be gorgeous and fruity, which is more likely to suit my tastes 🥰.
Fortunately, there is a store not too far away that carries them, so I'd like to try some at home from time to time 🍶.

Even though I feel that female toji's sake suits my palate, I am biased and inexperienced when it comes to the sake I drink, so I need to try more different sake brewed by different toji's 😄.
