アラジンKaze no Mori🍶 is brewed using Yamanokami yeast, which was isolated from the sassafras of Ogami Shrine.
Kaze no Mori usually uses only No. 7 yeast, so the difference in yeast is rare.
Lots of bubbles🫧 in the glass when poured.
The aroma is fresh sweet lime and grapefruit with powdery nuances at first.
Then, as the temperature rises a bit, a complex aroma of very wild plants and earth comes out strongly.
From the strong gasiness, a wild taste reminiscent of bran and acidity with a strong bitter astringent impact spreads out in a flash, as if covered by the sweetness.
The taste is full of rice nourishment and minerality.
Strong sense of wildness 😳.
I decided to add the "sake-fixing medicine" that comes with Kaze no Mori Alfa 7, thinking it might go well with the wild taste.
Then, the Nikki and Sansho spice from the sake remedy masked the bran feeling and it became a spicy, wild and dry Kaze no Mori.
Interesting😁.
With more tartaric acid, the aroma of other botanicals is added, and the spicy aroma becomes more complex, with a citrusy sweetness.
The taste is somehow more clean and dry spicy.
It's good!
Sake is also very deep, with the aroma and taste differing so much depending on the yeast.
