As one would expect, the best match for this dish is a sake that is more dry than Mr. Summertime. I hope the 300ml bottle of sake stored in the snow from Niigata Meisho Sake Co. in rural Ojiya, Japan will make an appearance. I don't know if it is the effect of storage in the snow, but it is mellow, smooth and better than expected.
