After returning home yesterday, I opened this one.
It is Sengoku Organic Naturals from Senkin, Tochigi.
Polishing ratio is almost the same as rice rice 😳 90%. It is a sake that is completely sake made from raw yeast and brewed in wooden vats 🍶.
The appearance is crystal with a slight yellow tint.
The aroma is bran-like, especially right after opening the bottle, and after a while it becomes sweet and sour plum-like with acidity.
The mouthfeel is smooth, with a clear sweet and sour taste that flows into the mouth and spreads with the stimulation of fine acidity like a gaseous sensation, and disappears with a strong bitterness and a lingering astringency firmly on the tongue.
The bran aroma and lingering bitter astringency give the impression of low milling, but the overall cleanliness is not that unpleasant.
As you drink more and more, your tongue gets used to it and the bitterness lessens, but if you don't like overly complex flavors, cold sake may be too much for you (I'm fine with it 😄).
As the temperature approaches room temperature, the mouthfeel becomes softer and more transparent, but the sweet and sour tastes become blurred, and there is a hint of cemedine in the overtone, and the astringency comes back.
For cold sake, I recommend drinking it well chilled and snow-cold in a wine glass 😊.
I will also try Rafa papa's recommendation of heating it later 🍶.
I will try it later 🍶 It is a proof of high brewing technique to be able to brew so beautifully with low polished rice. It was a good sake 😄.

I'm basically a cold sake drinker so I don't warm up my sake, but this one was super delicious heated up 😊I put it on a 55℃ jumpy warmer and drank it while it heated up and cooled down and finished it in no time ☺️
