This is the first sake from the brewery that I have ever had 🍶. It is Junmai Ginjo Unfiltered Nama. Ena Jozo is a sake brewery located in the countryside of terraced rice fields at an altitude of around 600 meters in the mountains of Nakatsugawa City, Gifu Prefecture, overlooking the Central Alps. The brewery was founded in 1818, around the end of the Edo period, and today the brewery's toji, an 11th generation Nanbu toji, brews the sake "Kujeruwa" that has been produced since the brewery's founding. The reason why it is called "whale wave🐳" even though it is a sake from deep in the mountains⛰️ is because "the clouds flowing over the mountains resembled a whale swimming gracefully"... 🙄. The word "whale wave" is read as "geiha", which also means "a great wave like that caused by a whale" or "a battle cry raised by many people", so it is also said to express a wish for a leap, a breakthrough, etc. 🤔. The appearance is clear crystal. The main aroma is typical of sake, with a sweet aroma of red apples and melon that is faintly present in the background, and a smooth rice aroma like rice cakes. The mouthfeel is soft and smooth, with umami and acidity spreading quickly at the same time, with a beautiful sweetness as it clears to the back of the throat. It is very sharp and leaves no aftertaste. It has no pretentiousness, and you will not get tired of drinking it. Delicious 🥰. Good morning Aladdin 😃 I've been interested in Kujerami for quite a while now, but I can only buy it at Hechikan, so I've been putting it off 😅. The name gives me an image of a heavy sake, but it's a beautiful sake 😋.
