On my way back from a pilgrimage to Mt. Daisen in July, I stopped by Kumazawa Sake Brewery in Chigasaki. The Chigasaki City Museum is located nearby. This sake brewery, with its bakery, restaurant, and other stores, is a busy place. Now, here is Tensei's summer sake. The silver cap decorated with a rakugo rock attracts me. It has white malted rice with a sake degree of -14 and an acidity of 3.3. I could roughly imagine what it would taste like from these numbers, but I wondered what it would be like 🤔 Aizan? So I bought it. Today, I opened the bottle, thinking I had to drink it before it got too cold. When I put it in my mouth, a nice sourness spreads. I thought it might be too acidic, but the aftertaste is strangely mellow 🥹I imagined it would be a bit sweeter, but it is mellow rather than sweet. You will notice the mellowness as you continue drinking. Interesting sake 😁.

Good evening Jay & Novi🌇. I was under the impression that the strong acidity without sweetness was the Edo Kaijo Yamadanishiki, but that was too acidic... 😓 This one is not sweet but mellow. I'm wondering what will happen if I let it sit for a few days 🤔
