9 points (wife 8.5 points) Sake: Junmai Nama Zake Rice: 100% Fusakogane grown in Chiba Prefecture Rice polishing ratio: 80 Yeast used: 1401 (Kanazawa type) Sake meter: -19.5 Acidity: 2.7 Alcohol percentage: 15 Sold at: Takano Sake Shop, Teinei Store (Teinei-ku, Sapporo) When the bottle is opened, it is filled with 3 pushers (repeatedly almost spilling out). It has a strong gaseous feeling. I wish this kind of sake had a screw cap for easy venting. Gorgeous top like green melon Fruity aroma with a hint of banana in the nose, full umami like rice malt, mild sweetness, and a soft acidity. The sweetness is not noticeable in spite of the sake's sake strength, and although it is mellow, the gasiness and bitterness make it refreshing to drink, and it goes well with a meal. Of course, it is also delicious on its own. Wife's Octopus Pasta (The! DASH! DASH!
