Iraka Sake Brewery was re-launched this fall as "the newest sake brewery in Japan" due to the succession of the business.
Iraka is the roof of traditional Japanese architecture such as straw thatched or tiled roofs.
It is a brand name that challenges the world with the blessings of the Northern Alps, the roof of Japan.
Katsumi Tanaka, a long-time sake brewer at Daishinshu Sake Brewery, will brew the culmination of his experience.
The appearance is a slightly pale yellowish green.
The first impression of the aroma is fresh white flesh of red apples.
There are also young pears, young melon, and bananas with a hint of greenness.
The whole seems to be veiled with the aroma of powdered rice cakes.
Smooth and smooth flowing texture.
The rice-like sweetness is lightly spread with a gentle acidity that includes a pleasant stimulation.
The sweetness changes to light and juicy from the mid-palate.
The light stimulation passes through to the nose, and the umami, including a slight bitterness, disappears and finishes as if soaked into the palate.
