This time it is my favorite Yoshidagura U😄Kinpu, the last ancestor of Koshihikari rice. I heard that it was grown without pesticides or scientific fertilizers. I got the impression that it is a very wild sake.
Let's start with the aroma. The aroma is faintly like muscat and freshly cooked rice. When you drink it, you will taste a moderate sweetness, a strong umami, sourness, and bitterness, more so than usual Yoshida Kura U. The aftertaste is sharp. The aftertaste is sharp.
As it gets a little warmer at room temperature, more bitterness and umami come out, and a sense of wildness can be felt, but overall it is very clean. It is hard to believe it is Yamahai. I am impressed by the quintessential technique 😊I didn't know they could make pesticide-free rice so beautifully with rice rice. It was very delicious.

Hi Jay & Nobby😄I think you are right, Yoshidagura U has a legendary trainer. They can transform any kind of rice into Yoshidagura's unique flavor. I think it is really a great technology. I want to buy it again.
