This shi-bi-en is my favorite among the seasonal brands of Kanbokuto Shuzo. It has a pleasant ginjo aroma that spreads the moment you open the bottle, and while it is light and dry, it has a pleasant bitterness and a good umami flavor without being unpleasant.
Maybe I'm being too favorably criticized because I'm from Fukuoka, but I personally think that this sake could become a bit more famous.

I have also tried shi-bi-en's spring, summer, fall, and winter compilations, but winter is my favorite👍.
As you said, it has bitterness and sharpness, so I think it will be popular, but there are only a few stores outside of Kyushu that carry it...

Yes...I have never seen it outside of Fukuoka. I almost cried when I found it once in Aichi Prefecture on a business trip😭.
