Travels in Sogape Part 4: Numérosis I was going to open a normal lot, but I opened a Domaine Ikedalot by mistake😅. Nagano Miyamanishiki 59% polished, 16% alcohol The aroma is mild, but has a hint of a yeast yeast yeast yeast + lactic acidity. A bit of a tang (I thought this might be a pattern that would disappear after a little while after opening the bottle, but it was gone cleanly by the second day and the aroma became more grapey 😊). When I drank it, I found that it had a matured sweetness and a strong umami flavor. The acidity is rounded and rounded. There is a bit of bitterness in the finish. It is a little bit lighter than the others. After drinking 1, 2, 3, and 6, I would like to close with my impression of the half year aged Sogape. It is more difficult to tell the difference than drinking new sake right away. The fresh acidity of the new sake is gone, and the sweetness and the matured flavor are more intense (which one you prefer may depend on your taste). The sweetness and the matured taste are more matured than the new sake (it depends on your taste). Yes I dare to say that I prefer 3 and 6 (the acidity is more pronounced than 1 and 2) even though it is difficult to tell the difference between them. After all, there are 7 bottles, so the journey continues... 🤣.

I opened them in order, but when I drank all of them, I compared them with the ones I left at the same time. 1:caramel, 2:good balance of sweetness and acidity, 3:similar to 2 but with a hint of sake yeast, 6:light ⁉︎ slightly bitter →2 was delicious ‼️
