I would like to toast to the new year with Jikin's nigorizake as the first bottle of the new year.
The bottle was naturally stirred vigorously as soon as it was uncorked, and we could feel the very energetic activity of the yeast.
The fresh, fresh aroma of green apple and muscat, pleasant gasiness, and a silky touch lead you to a refreshing sweetness that is typical of Gohyakumangoku.
The lush umami and beautiful acidity are complemented by a firm bitterness.
We welcomed the New Year pleasantly while savoring this artful balance!
