My father-in-law and mother-in-law are visiting Osaka, so I came home early and had dinner with my father-in-law 🍶.
To suit my father-in-law who likes dry sake, we had Tobiroki Junmai Ginjo from Hiroki Shuzo Honten Sake Brewery in Fukushima.
I mean, the only dry sake in our sake cellar was Tobiroki 😅.
I've had Tokujun before, but this was my first Junmai Ginjo😄.
It is brewed with 100% domestic rice (Yamadanishiki and Gohyakumangoku) with 40% Koji rice and 50% Kake rice, polished to Daiginjo standards 🍶.
It was served crisp and cold.
The appearance is clear crystal.
The aroma is gentle but clear and fruity with a graceful ginjo aroma. ☺️
The texture on the palate is extremely smooth.
It quickly fits into the palate and spreads throughout the mouth, finishing with a beautiful acidity.
As the temperature rises and approaches room temperature, the beautiful and gentle sweetness of the rice and umami can be felt in good balance with the acidity.
While maintaining a beautiful transparency throughout, the sharpness of the firm acidity creates a sake-like drinking experience and leaves nothing to be desired 😄.
Very good sake and delicious 😋.
My father-in-law liked it very much, but he couldn't finish the whole bottle because of the cold stares from my mother-in-law and wife😅.
I will try heating it up!
