Reborn and Restarted Sake Brewery, brewing only Junmai-Ginjo all by themselves in Niigata!
One of the breweries we like to support ❗️ 💪.
It is dry!
And with an alcohol content of 18%, it packs a punch 🤛.
As a lover of sharp, sweet and tasty sake, I'm not a fan of it, but Pekho, who loves dry sake, gave it a score of 8-9 😃.
I got the impression that it is not a classic taste, but sharp, punchy, clear, and has the umami of rice in the back 👍.
It was served chilled.
The aroma I felt was
-Aroma: Ginjo aroma and some alcohol aroma.
-Aroma: Aroma of ginjo and a little alcohol.

-Spiciness: 4 at the beginning → 4 in the aftertaste
-Sweetness: 0 at the beginning → 0 in the aftertaste
-Sourness: 2 at the beginning → 1 in the aftertaste
-Bitterness: 0 at the beginning → 0 lingering 0
-Astringency: 2 at the beginning → 1 lingering aftertaste
-Rice flavor: 2 at the beginning → 2 in the aftertaste

I bought sushi and takowasa at Kadokami Gyorui! I had to open this one 💪I couldn't decide when to open Den-emon, I found Tamakihar at a liquor store I recently started going to ❗️ I think I can complete Den-emon ❗️ Go to the liquor store tomorrow 😆🙌

The sushi with wasabi 🍣 and the tako-wasabi changes the character of the sushi, the sharpness remains the same but the punch 🤛 is milder👍!
Sake is really deep 👍
