Mr. Taikara Urasato, the younger brother of Mr. Chikara Urasato, is also a brewer, but he is also involved in rice cultivation.
This sake is brewed with Miyamanishiki rice organically grown by Mr. Taikara.
The first day after opening the bottle.
The aroma is stable with melon and banana.
The aroma is sweet, with a beautiful acidity that includes a slight hint of malted rice, and the rice aroma is comparatively rich.
At first, it goes in smoothly, and as it warms up in the mouth, the honest sweetness spreads softly and blends in with the gentle acidity.
The fragrance is more vibrant, containing a moderate sweetness and a slight acidity, with a refreshingly cool and characteristic sourness that passes through to the nose along with a gentle alcohol sensation.
The bitter umami taste when swallowed tightens the whole and gives it a sharp edge.
It leaves a slight astringency and a long aftertaste.
The way the acidity comes out and the lingering astringency may be characteristic.

Elegant aroma based on melon and banana.

The juicy sweetness soaks through brightly as soon as it hits the palate.
