Here is what I had for my second cup of coffee at SHIMA & coffee & saké before the company farewell party!
Tazake Kojo-zake.
The aroma is like ripe apples, the mouthfeel is juicy and full of sweetness and umami, then it finishes with a calm and deep aftertaste, and finally a bitter taste at the back of the throat.
Not too sweet, but with a deeper umami and richness, it has an apple brandy/calvados-like taste 🤔.
I would rather drink it while relaxing with a movie or reading a book than with a meal.
I ordered a cup of Ethiopian coffee to finish off the meal.
Compared to the rich taste of "Tasake", I felt the taste of "Ethiopia" was a bit bland, but the refreshing taste was a refreshing drink to get me in the mood for the next day 😋.

I've added a correction to my post. This is a coffee shop run by a master who loves Sake, and I always have a cup of coffee to finish off my lunchtime drinking 😋.
