This sake was created through crowdfunding, and the rice, milling ratio, yeast, and brewing method were decided by a vote.
Ginga Ginga, 50% rice polishing ratio, yeast: Giovanni's research.
This sake is brewed not with the same sake brewing method as the usual Shichu, but with the same method used at Hiroki, the acid base yeast.
Sweet and fruity, but mild and impressive acidity.
