When I saw that a new sake had been released, I was excited and went to buy it. I heard they changed the specs from last year's 40% to 50-50. The aroma is sour and rancid, with a hint of grassy blue. On the palate, it was chili-swirling, with mild pear? and sourness. The sourness comes with a juicy acidity and the richness of rice, and when swallowed, a forest-like aroma of mountain san (🌳). Then it finishes with a light bitterness. Maybe drier than imagined? But it is delicious! The next day, the chiri-shuwa settles down a bit. I like the fact that it has a good flavor, but it is on the refreshing line and is not converted to sweetness. The next day, it became a little more sour and dry. I don't think I have ever felt this change in Yamazan before. The chirichiri is about the same. The aftertaste is refreshing while lingering. It is still mellow and full of flavor, but it also retains its freshness. I am looking forward to another season.

Hi Kotaro 😃I've only had the Yamazan once, but the Kochira looks delicious from the color of the label. I've only had the Yamazan once 🥲 but this one looks delicious from the color of the label 😋 I'm curious about the refreshing dry one 😙 I haven't had it in a while 😙.
