RAIMEI is a new brand from this season of Takachidai Shuzo, Maki-hata. The name "RAIMEI" is derived from the fact that the brewery is located at the foot of Makiki-yama and uses its underground water for brewing. The sake rice used is 100% "Ipponjime" rice grown in Uonuma. The rice is polished by flat polishing and then washed in a highly concentrated oxygen micro-bubble rice washer, which was also introduced this term, to brew this sake. Flattened rice polishing is a rice polishing technique in which the rice is polished equally thick from the surface. This process removes proteins and other substances more efficiently than conventional spherical rice polishing or original rice polishing in which the rice is polished equally thin from the surface, resulting in a cleaner sake with less polished rice. In addition, micro-bubble washing is said to reduce the burden on the rice and wash away only the bran while leaving the flavor layer intact, thus reducing the amount of rice crushed 🤔. I will try it. The appearance is clear crystal. Mild and gentle melon and banana aroma wafts through the rice malt-like sake aroma. A slight gaseous stimulation in the smooth mouthfeel. A strong fruity sweetness comes and goes for a moment, then quickly recedes to reveal a pleasantly stimulating acidity that flows down the back of the throat and finishes with a sharp finish. From the mid-palate onward, one can taste a beautiful umami and a firm bitterness. The lingering aftertaste is moderate and gradual. It fills the gap between Takachiyo and Takachiyo 🤔.
