I went to a few liquor stores today and didn't catch any Senkou UA stag beetles. Chickenshit, I'll have to change my mind with a Kabuto-bug!
The aroma is soft lactic acidic. Not too strong. No gassiness.
The sweetness of this year's Kabutomushi is quite restrained, and the acidity is crisp and strong as usual. In other words, it is quite dry this year.
The acidity does not linger on in an unpleasant way, and it is very refreshing and crisp. Yes, it's a quintessence!
This sake is clearly more acidic than the Kaze no Mori we had one year ago. Sourness is justice, after all. Let's keep looking for stag beetles tomorrow!
