This sake is a collaboration between Houou Mita and Senkou, who say they have revived an ancient rice called "Aikoku Sangyo" that was grown in Tochigi, using their respective brewing techniques to bring it back to the modern age 🍶.
Just reading the description, my expectations are high😃.

It starts with a mellow umami sensation, then the lactic acidity starts to rise early on and finally fades out with some spiciness👍.
I should have bought the Houou Mita too 😅.
Last Friday, I had another sake party at Izakaya (izakaya) with my company's sake friends.
Although there was one sake that wasn't sake...
I drank a little too much, partly because I was coming off a medical checkup 😵.
We had it chilled!
