Tsuyodai, here too😃. I heard that (1) steaming rice steam, (2) crushing the unrefined sake with an oar, and (3) keeping the rice polishing ratio below 35% are three of the forbidden things in the sake industry 🤔. All of them seem to be rather broken nowadays, partly due to the advancement of technology 😁.
