When I went shopping at Izumisano Fish Market in the evening because I wanted to eat hamo (pike conger), I bought a hamo (Japanese conger) and they gave me 12 freshly caught hamo (Japanese conger) for free.
I had never bought hamo before, so I tried boiling them, but there were so many small bones that it was difficult to eat them.
I marinated the rest in vinegar and after two days the taste had settled down and the bones had softened, I chose the honkin, which would go well with sushi or fillets.
It was delicious with a clean aftertaste.

Konoshiro! I remember in my hometown we used to eat it as sashimi without worrying about the small bones 😅.
It wasn't until I was an adult that I learned that it tastes better when it's vinegared without worrying about the small bones 😌.
