Rice used is Hachitan Nishiki There seems to be a project called the "Hiroshima Ichizoun na Junmai Sake" series, which includes "Momiji Manju", "Okonomiyaki", and "Oyster Fried Oyster", which are basically low-alcoholic beverages. This sake is a very low-alcohol sake with an alcohol content of 10 percent. The citric acid content is so strong that one wonders if this is sake. It has a taste like "is this sake? If someone told me it was a white wine, I would believe it. We have not paired it with oysters because they are not available yet, but it went well with grilled scallops with butter. ❣️ It was an interesting drink...
