It's been quite a while since I've had a Gassan.
It is a new green junmai ginjo 🍶.
Mr. Yamamoto, the brewer of Gassan, comes to chuin Shinmachi regularly (mostly as a customer), and because of this, Gassan, which is rather rare in Kansai, is sometimes included in the lineup.
The aroma is a little sweet red apple, with a refreshing hint of melon.
The taste starts with a refreshing acidity and sweetness, followed by a beautiful umami and bitterness, and then finishes with a light acidity.
The astringent taste remains in the aftertaste.
The overall flavor is crisp, and it seems to be a sake intended to be drunk lightly on a cloudy spring day or during the rainy season.
This was the wrong order to drink it, as it was too light to drink after the Jikin 😌.
As with pairing, the order of drinking is also important, and the impression will change considerably.
Well, I usually start flying because I want to drink it as soon as possible, but I want to drink it while thinking about the drinks to be consumed at the restaurant and the order in which they are to be consumed 🤔.

I didn't think it was Gassan at first because the label was very stylish 😅
There are many kinds of Gassan, but I think this one is just particularly light 🤔 the last Gassan I drank was much darker 😄.
