I had to stay an extra night, so I went to my favorite place for dinner.
The manager said, "You've come at a good time, we've got six new kinds of sake today! He brought me this to start.
He brought me this to start off the evening.
It's from Hamakawa Shoten, the brewer of Bijou.
The label looks like Kochi!
The taste was crisp and dry, but fresh because it had just been opened!
My first drink was finished in no time!
Skepticism
Shintaro Junmai Shiboritate Nama Genshu uses Matsuyama Mitsui, a rice suitable for sake brewing, as the raw material and soft subterranean water from the Nahari River as the brewing water.
The sake brewed by Toji Akira Obara, who also served as assistant toji at the Drunken Whale Brewery, is not simply light and dry, but features a well-balanced flavor with acidity and umami in unison, and a crispness that is unmistakable.
It has the freshness that only new sake can provide, and it has an excellent balance of aroma, umami, and acidity.
The product is named after Shintaro Nakaoka, the captain of the Rikuentai who was active with Ryoma Sakamoto at the end of the Edo period.
