Yamanoi is a brewery in Fukushima, and the toji, Kagehiro Watanabe, makes sake based on the concept of "brewing sake with a free spirit. Fukushima Prefecture has many high-level sake breweries, and we have high expectations for this one.
My impression is that it has a fruity, melon-like flavor. The rice polishing ratio is 50, and the taste is clean and refreshing without any cloying flavors.
I had never been aware of Yamanoi before, but it was very tasty.
