I opened a bottle of 2 year old Yamazan that I was looking forward to: ⛰️
We started with Hitokochiki.
The aroma is citrus, white grape type with a clean acidity.
When you drink it, it is quite chili shuwa🫧 full and clear with a hint of grapefruit and forest!
The last is a bit bitter and cuts off quickly.
It is sharp, yet light and mellow. The sweetness of the rice spreads softly. Wow, it's delicious!
I wonder if it becomes more grape-like and a little sweeter as the temperature rises. I like it kinky.
After a few days, the aroma becomes fluffy and milky.
When you drink it, the chili is alive and well, with a forest aroma of juicy sweetness and deliciousness, and a light bitterness. It's amazing how it establishes all this sweetness, bitterness, and acidity.
It is not heavy in spite of its maturity. It's round, yet still light ✨.
The slight tanginess of the alcohol is a nice accent. Fruity and clear rice 🌾.
Clear and crisp as usual ✂️
Hitogochachi is usually a bit more sharp and bitter than Yamazan, but when aged, it becomes smoother and mellower.
It was delicious...I hope to drink Yamae Nishiki soon.
