Yukawa Sake Brewery was founded in 1650 and is the second oldest brewery in Nagano Prefecture.
The current owner is Naoko Yukawa, the 16th generation.
Located deep in the mountains of Kisoji in Shinshu, the second highest sake brewery in Japan at 936 meters above sea level, the brewery brews "Kisoji" and "Kuroemon XVI" by brewing sake that is resistant to cold weather.
Its brewing techniques are so advanced that Kuroemon XVI's Junmai Ginjo Miyamanishiki was selected as the Champion Sake🏆, the number one sake of all sakes at IWC 2023, and is now a hot brewery.
The sake we drank this time, Kuroemon XVI, is a private-brand sake from Jizakeya Miyajima, a Shinshu sake specialty store.
It is a pure rice sake made from 100% Hitogochi from Yaehara, Shinshu.
The exterior is crystal with a hazy yellow color.
The aroma is refreshingly sour apricot and faint apple, with a hint of joshin powder.
The mouthfeel is refreshingly smooth.
While the refreshing acidity, including a slight gasiness and small acidity, spreads over the base, the mild sweetness and umami spreads quickly on the tongue, and the acidity finishes off at the back of the throat in a pleasant manner.
The overt aroma has a rich rice aroma.
I thought it would be a fancy type of sake since I heard it is popular now, but it was very gentle and easy to drink and delicious sake only for junmai sake. ☺️

I drank Jungin Hitogokochi last year and it was 🍍~🍈, so I was wondering if it is much different from Junmai 😊 I would like to try this one with its umami taste.

I think junmai sake is more gentle than junmai ginjo ☺️
Recently, I like unfiltered nama sake, but I also like the calmer taste of once-hot sake 😊, but I still want to drink both 🍶🤣.
