Sake consumption is down due to the heat wave.
After a strenuous summer hike in the Northern Alps, I purchased this sake at my favorite liquor store on my way home.
I had no hesitation in selecting the "Gohyakumangoku" because it is no longer in production and only in stock.
It's a bit acidic on its own, but it's an excellent food sake!
As time passes after opening the bottle, the taste becomes more familiar and the sweetness and umami spread!
Ingredients Koji rice: 60% Yamadanishiki (domestic)
Kake rice: Gohyakumangoku (domestic) 60
Alcohol percentage: 17% to less than 18
Sake Degree +4.5
Acidity 1.95
Yeast used: Home-brewed yeast
Water used for brewing: Fuji no Gozensui

The picture of the sea of clouds 🌄 is so divine and beautiful that it made me want to clasp my hands together 🙏.
The sweet and tasty sake is also delicious, but after that I drank Tang's Yamahai Junmai and once again I felt how wonderful it is as a food sake!
