Starting today, we will have the Shinshu Kamerei Festival (lol). First up is Kinmon-nishiki Hi-ire, which I purchased on a recent trip to Ueda. Kinmon-nishiki is made from the famous sake rice Yamada-nishiki and Takananishiki. It is a very precious sake rice that seems to be very hard to grow. The aroma is a little less intense than that of the usual Kamerei, but it has a complex aroma. The aroma is not too fruity, but it has a grassy aroma. The unusual aroma is a bit confusing. When you drink it, the complexity of the aroma is present, but it also has a slight carbonation and sweetness. The final taste is a bittersweetness and umami, and then it ends. It is complex at first, but it comes together at the end, and then it is cut off. As the label on the back says, it is "fruity" and "elegant. It is simply delicious. The freshness of the fire-aged wine is amazing, and it is elegant without being too sweet. I am happy to be able to drink such a wonderful sake that is both fresh and elegant. I also bought a bottle of Kinkame, so I am looking forward to comparing the two (^o^)
