The acidity is typical of Shinsei.

Shinshu Kamerei Junmai Hitogokochi
Juicy.
Third cup
Sundo Yamadanishiki Nifarm
Sour and delicious.
The fourth cup
Jikin Hachitan-Nishiki Hi-ire
Sweet-umami. Out of the four cups, this was my favorite.
