We received a "Nagano no Toji Tasting Comparison of All 7 Types" at our favorite chuin (Part 2) 🍶.
This is a commemorative sake for the 100th anniversary of Shinshu's sake store, Jizakeya Miyajima.
The seven sakes brewed by female toji in Shinshu were collected.
No.2 is "Toyoga" (Toyoka).
This sake is brewed by the toji, Kayoko Takazawa of Takazawa Shuzo.
She has been the toji since 2005 and has launched Toyooka as a new brand, working with her husband and wife to brew sake that maximizes the flavor of the rice and pursues a crisp taste.
Sorry, I was uninformed about Toyoga😅.
The aroma is rather sake-like.
Soft mouthfeel.
Dry umami with acidity and a hint of rice sweetness that comes later.
It is a dry sake with an umami taste that is different from the light dry sake, and conveys a sense of quality.
Toyoga seems to have a variety of sake qualities, so I would like to try others.
