From April, my store, "Sake and Otsumami Chuin Shinmachi", which used to be my favorite standing drinking place that I frequented frequently, has become more distant 🥲.
But I had some business to attend to at the beginning of the year 😅.
I was given a bottle of Prototype, a test brew from Kitanishi Shuzo, the brewer of Sairai, Bunraku and Bunraku Reborn.
This is the first time for me to try their Honjozo 🤔.
The label design looks like it was shaved with a coin 😎.
The aroma is of young bananas with a hint of fresh green vegetation.
On the palate, a fresh sweetness comes in quickly, followed by a bitter yet refreshing acidity from the alsobe, and finally, the hottness of the alcohol leaves the nose.
The taste is rich and the aftertaste is clean and delicious. ☺️
Maybe Aruzoe will be added to Sairai's lineup in the future?
A flavorful honjozo like this would be very welcome.

At chuin, we often serve local limited edition sake and different brands of sake, so if you see a suspicious sake you've never heard of, I recommend asking anyway!
I recommend you to try Chiyonohana, a local brand in Imi 🍶.
