Oh, it's not what I expected.
I had drunk Hanagaki once a long time ago, and had avoided it because I had an image of it being tough and hard to match with food.
After a long time, I found it to be a brownish color, almost like green tea, and I thought, "Ah, this is what it looks like," but when I drank it, it was unexpectedly mild.
It has a matured feel to it, but it is not as harsh as I had expected.
However, it is not a good drink on its own.
But when I paired it with stewed vegetables, I was amazed.
The unpleasant aspects of aging are gone, and the mild umami and sharp acidity are delicious!
This is really strange.
I don't know if it was made with an aim or if my taste buds just happened to match, but this is the kind of marriage I'm talking about. I don't know.
