I found a notice on the Sugihara Sake Brewery's website, and found that the deadline was the end of October, but I was able to apply for the sake in early November.
I really wanted to compare it with their flagship brand, Imi no Gin-sen, but I missed out on the chance 🤣.
It has a sweet aroma like grapes with a hint of sugar and a soft mouthfeel. The first impression is sweet, but it has a rich sweet-umami flavor, then a sharp taste, then the alcohol starts to heat up the throat and there is a bitterness ✨.
Second day
The gradation of umami from clear sweetness is beautiful 😊The acidity comes slowly and raises the sharpness✨.
The Ibigawa I drank before was thicker, so the mouthfeel is more refreshing than that, but the sharpness is stronger here 🤔.

I've never drank either Imi or Chiyonohana, but they have beautiful names 💐I wonder if the taste is quite heavy? But if it's sharp, maybe it's easy to drink ☺️

Both 射美 and Chiyonohana have a sweetness like Murayu. But I think the 射美 is easier to drink 🤔 I've only had one shot of 射美 myself so I can't say for sure 😅.
Next year I want to drink more sake that I don't know more about 😃.
