It's been a while since I've had a Sawaya Matsumoto, and I picked this up because of the simple label.
I wonder if Sawaya Matsumoto keeps all the rice polishing ratios private 🤔.
After opening the bottle, the aroma is of yogurt and calpis, just like muddy rice.
It is pleasant because it feels moderately sweet.
There is also a strong sense of gas, which is typical of Moriboshi!

Not only the lightly sensed sweetness and umami, but also the refreshing moderate bitterness and acidity that brings them together spreads in the mouth.
The aftertaste is refreshing for a light nigori type sake.
I think it can go well as a food wine 👍I paired it with various cheeses 🧀.
