The nose opens with a hint of dense apples, and towards the latter half of the bottle, the aroma is sweet, reminiscent of quince and cotton candy. You can sense the rich sweetness and umami of the rice. The acidity and bitterness are well balanced with a refreshing finish reminiscent of citrus fruits. Although no air bubbles are visible, you can taste the tingly gas feeling until the very last sip.
