Nigori Ekiden, section 9
Junmai-Daiginjo spec Junmai-Ginjo sake. In such a case, it would be better to call it Junmai Daiginjo, but is it not?
It was very active, and it took about 5 minutes to open the bottle... so much so that it was automatically stirred as a matter of course, but the mouthfeel was surprisingly fine and slightly carbonated.
The mouthfeel is surprisingly fine and slightly carbonated. The volume gradually increases from a slight sweetness, and after the sweetness is cut off by acidity, the spiciness comes out. Finally, nigori-like aroma and umami (flavor) come out and disappear with the bitterness that slowly builds up.
I had imagined it to be sweet, but contrary to my expectations, it is not sweet at all! LOL!
This is a perfect food sake! It is silky and dry, just like Junmai Daiginjo specs.
I tried drinking it warmed at first, but this dryness may be close to Shinkame's active nigori.
The sweetness was quite restrained, which was surprising, but it was well received by those who started drinking sake, and I personally liked it very much, so I think it was an impressive sake that could be called a new sectional record even though it was the 9th section, the ace section.
...I regret a little bit that I made the Chiyoda Sake Brewery enter the Nigori Ekiden so badly.
