兎御殿
Dry junmai daiginjo 🐰 made with Gifu Prefecture yeast G2, which has high caproic acid ethyl production.
I was curious to buy it because Harushika doesn't have a dry Junmai Daiginjo.
The rice used is Miyamanishiki and Akita Komachi, with a milling ratio of 45%, an alc of 15, and a sake degree of +17.
Harushika's driest Onikiri has a Sake meter of +18, so this is the first Daiginjo that is this dry.
The top aroma is slightly apple-like, and when you put it in your mouth, the fresh green apple aroma pops 🍎✨. When it pops and runs away, it is sharp and dry with a slight bitterness in the aftertaste.
It is a beautiful, clear sake that is typical of Junmai Daiginjos, and really is as fruity & dry as the label on the back says.
Danna liked it as a daiginjo, but I thought it was a ping pong dash sake 🤣 I hope it stays a green apple until you open the door at least 🍎💨💨.
