I was told that the "Koshinohakusetsu" series, which was the main lineup, was discontinued at the end of last year due to brand renewal. I did not know that.
This is the sacred sake brewery of Yahiko Shrine, the highest shrine in Niigata, which boasts the largest number of shrines in Japan. It is also a brewery that has produced many brewers who have gone on to become toji (master brewers).
The Izumi-style brewing method, which has been preserved at the foot of Mount Yahiko, a famous mountain in Echigo, has been used to make sake just like "Izumi".
