The natural lactobacillus brewing process is said to be the Koei Kiku style of nama motsukuri. The freshly opened flavor is soft and refreshing raisin. I think I may have left it in the refrigerator too long. It has the same characteristic sourness, concentrated sweetness, and umami that you find in dried fruits. When I bought it, the introduction said, "Don't rush and enjoy it slowly..." So I have been enjoying it every night a little bit like a dessert wine, and the bitter cocoa taste has turned into a dense flavor reminiscent of chocolate. The taste was similar to that of orange peel chocolate, with a hint of bitterness and a hint of salt added as a hidden flavor. Lunch was beef bone light ramen, soy sauce.
